From the northern region of Portugal Barro Negro, or black clay, is found. High fired, unglazed earthenware is ideal for roasting, braising, and baking. The length of time and high temperature of the kiln develops a deep carbonization resulting in the graphite black of each piece. Flavors are enhanced when food is prepared in the barro negro due to the "steaming" effect of cooking in clay. These hand made pieces are meant to be serving dishes, straight from oven to table.
